Pintastic! Marshmallow Frosting

I swear that I will quit with the “Pin-Puns” soon. But really, I am so glad that I pinned this recipe!  As you can see, I originally pinned this recipe 27 weeks ago.  See those fluffy, fluffy peaks of whipped goodness?  That’s why.









Tonight, after my roommate Jess and I devoured our dinner, we discussed making cookies.  After searching Pinterest, and FoodGawker being left uninspired we went with the delicious standby of chocolate chip cookies.  It is then that I remembered this pin and knew that we had to make cookie sandwiches. 

The website that this pin linked to, Pixels and Paperie  made creating this icing simple.  I have copied the recipe and directions below:

  • 4 large egg whites
  • 1 Cup ordinary sugar (white or brown)
  • 1 pinch of salt
  • 1 tsp vanilla essence
  1. Place all ingredients except the vanilla essence into a bowl which you can place over a pot of simmering water. {You could use a double boiler here instead}
  2. Whisk the egg white mixture constantly over simmering water until the sugar dissolves and the mixture is hot to the touch. {It takes around 5 minutes}.
  3. Pour the mixture into a bigger bowl and beat with an electric mixer for 3 minutes. {Add the vanilla while beating}. After 3 minutes, the mixture will be lovely and fluffy.
